Having played Final Fantasy VI and VII I would say that the original VII was far more fun to play. The materia mechanic was more fun to use than the magic system of VI. Though VI in my opinion laid the ground work for the Junction system of VIII with equipped summons granting magic abilities that could be learned through experience. Another aspect the original VII has over VI is that its narrative flows a bit smoother with how characters are introduced as well as having their arc's resolved. Many characters from VI are not important to the overarching plot and easily get lost within the shuffle of telling rather than showing. Only Locke, Terra, Celes, Sabin, and Edgar feel to have a complete arc. Gau and Shadow technically have a complete arc if you're willing to play the game in an unintentional way that's very niche and requires a strategy guide. Some think that's neat, however I find that rather obnoxious personally. Then there is Cyan who has a strong intro, but ultimately gets dropped from the story half way through and is only used for comedy scenes mostly. Everything that comes after the Ghost Train sequence in my opinion was a terrible use of his character honestly. Many other characters like Gogo, Mog, Umaru, Realm, and Setzer feel like after thoughts made to expand the cast with very little purpose outside of one or two brief scenes. They're involvement in the story is relatively small in comparison to the previously stated cast. The original VII had extra characters like Yuffie and Vincent, however I felt they gave sufficient information about who they were simply by exploring the world without too many obscure conditions needing to be met. I feel Vincent's backstory was a better way of handling a character like Shadow's with how you learned more about him. As for the villains I admit Kefka is handled more well than the original Sephiroth. The original Sephiroth appeared to go about his plans in a round about way that didn't exactly make much sense. Given he appeared, by what the audience is shown, to have had a pretty sweet life being the poster boy for Shinra's military. The original VII doesn't show what Sephiroth's life was like as a child to know how much he actually suffered under the hands of humanity to ultimately turn antagonistic towards them. It's briefly mentioned that Sephiroth has a mother complex, but the man is already in his late 20's and doesn't seem that emotionally stunted outside of it being casually said that he is. Kefka on the other hand makes sense what he is doing because he is basically Hojo if Hojo experimented on himself. We're shown that him gaining magical powers as a normal human warped and twisted his logic. That he's constantly in agony because the abilities he's scientifically grafted onto himself fried Kefka's ability to feel emotions or be anything other than nihilistic. Plus Kefka's charisma is far more charming than Sephiroth's "Mommy Dearest" motivations. Ultimately I find both VI and VII heavily flawed narratives. They both have story elements I would drastically change to be more fluid and interconnected. Less side characters that have zero to do with the end of the story. That said, VII outshines VI in terms of gameplay mechanics and overall use of the world. But Kefka outshines Sephiroth by a mile!
