Why do so many manga get cancelled early on?

I was just curious if anyone has an answer on this.
I recently bought a manga I've never heard of before finding it(Crazy Food Truck) and after reading the first few chapters, I really like it!
But when I was looking up how many volumes there were, I found out that not only did it get cancelled, but it got cancelled after only 3 volumes.
