I've tried its very hard to find the appropriate ingredients in the US, BBQ I can do and most mainstream cooking. While I was in Culinary school we got the Chef to yell at me and my partner because we couldn't taste the Tabasco in Homemade Clam Chowder so we added it until we could. He screamed at us because it was too spicy.
