It is actually a common misconception that egg yolks are unhealthy. The reason why people think so is because egg yolks are high in cholesterol. The thing is, high cholesterol isn't necessarily bad because it does not directly increase cholesterol level in blood. Cholesterol is produced by liver because it is needed for various body functions (Cell membranes are made from cholesterol, hormone production requires cholesterol etc). Whenever you eat foods that are high in cholesterol, liver simply starts producing less of it, and the amount stays the same.

@sparkis you can, you can use ricotta too, I just like goat cheese since it has a better flavor and my grandma made it lol

The lunch I did today was chicken thigh stew
Ingredients:
Olive oil
Boneless chicken thights (the amount really depends on you, but I would recommend doing a larger amout so about 6-10 pieces)
salt and pepper
3 carrots
1 onion
half a cup of water
3 cups of chicken broth (try to hit for a low sodium one. Homemade broth would be ideal)
3 tablespoons of flour
Chicken and stew seasoning (not sure what spices are used in these seasoning mixes, need to look it up)
2 bay leaves
Brown the chicken thighs in a pan over high heat. Brown until golden brown on both sides. Add a pinch of salt and pepper while browning.
Chop up carrots and onion and cook for a few mintues
Add water and deglaze the pan
After that add the broth, seasoning and bay leaves (I don't know how much seasoning I put it exactly. I measure it by the eye really)
After a few minutes, transfer everything to a pot and simmer from 45 minutes to 1 hour. Try to keep the liquid level just about the skin of thighs
Serve with bread or rice.

As promised here are pics of the burrito. I didnt add lettuce and sour cream and all that so you can see what it looks like. Layered rice, beef, then chicken and topped with shredded cheese.
