Tried something different, pheasant with mashed potatoes and grilled mushrooms, the mash and the mushrooms were good, the pheasant... Not so much.

I didn't overcook it, but it was very tough and gamey, well it's a wild animal after all.

Oh I see. The same happens when you cook and old hen or a rooster. The meat is very tough

It's one we farmed here, it's only one year old, but it was a male pheasant and they're a tougher than the female ones, but they're not tender either. I'm still saving the bones for stock, can't waste that
