Looks delicious. I may be biased since I absolutely love coconut. Add some sliced almonds and I bet that'd be a good addition.

tried it once with almonds, it was pretty good, definitely recommend trying it!

Idea number two ... Coat the outside with honey so as it bakes, the honey will slightly caramelize. Or...OR... Chocolate chips mixed into the dough, honey on the outside and almond slices coating the outside.

Butter cream? Selling yourself and the cookies short. Although, I'm fairly sure that's not the kind of icing you meant, buuuuut.... Cream cheese icing is superior.
