Why are men only attracted to the bubbly and sweet personality?

Honestly I see nothing wrong in wanting your potential spouse to be optimistic. I've dated way too many people with depression and other mental issues. It's quite the drain to carry all the emotional weight in a relationship so to look for a cheerful person is quite refreshing.

A lot of people have already touched on it, but tastes really do shift pretty drastically from one person to another, and some people develop new tastes. Personally I think I sine wave between preferring a reserved personality and a more abrasive one.

Of course, such absolutes are impossible. But I sense the question was about trying to understand why such a personality type would be seen as desirable

I actually avoid the bubbly energetic types most of the time, they remind me of e-girls/party girl types. I go more for the Aubrey Plaza or Daria or (insert cynical goth girl or awkward hypersexual nerdy girl personality here). I dont really like "normal" girls.

My only requirement is that the girl likes cereal. Thats all
