I'm a big fan of Korean roasted pumpkin myself.

Works best with the Korean green pumpkin as in the above photo.
INGREDIENTS:
1 small pumpkin or 1/4 large pumpkin
1 tablespoon olive oil
sea salt
ground clove
ground cinnamon
ground nutmeg
1 tablespoon packed brown sugar
DIRECTIONS:
Heat oven to 400F. Using a large metal spoon, scoop out the seeds and insides of the pumpkin. Save the seeds for roasting. Use a sharp chef's knife to cut slices of pumpkin, about 1-inch thick.
Place pumpkin slices on baking sheet. Drizzle with olive oil and rub on both sides of pumpkin. Season with salt, spices and brown sugar. Roast for 20-25 minutes, depending on thickness of pumpkin slices.

Never seen a Korean green pumpkin before, I'll have to go to one of the asian grocers, sounds delicious though.

Leeks, canned pumpkin is just pumpkin puree, if you can't find it at the store, you can make your own really easily. :)
Same thing for pumpkin spice, it's just a mix of spices used for pumpkin flavored sweets. It's usually cinnamon, ground ginger, ground nutmeg, and allspice. :)

Caramelized the onions while the potato cooked, added chilli and garlic, cooked for a bit, added the spices and peas, corn and carrots. Mixed it all together with the potato. Put it on pastry, folded it and squished the edges together with a fork, cooked for a while in the oven, super easy and pretty darn delicious imo.
Photos are tiny af bc my internet just didn't want to upload big files.
